Vegan Kolacky Cookies

These delicious cookies are firmly ingrained in the memories I have of my childhood.  They are Czech/Slovak and my elderly relatives made them by the shoebox full for my family to take with us (as well as enjoy while visiting) after we went to Illinois to visit them.  I had the pleasure of finding some in the Czech Village bakery in Cedar Rapids, IA while on vacation with my husband and son and have wanted to veganize the recipe to make some.  There are many varieties of these cookies, some are folded over, some are like thumb prints, some with cream cheese, some without.  They're all good, but the folded over ones with cream cheese in the dough are my favorite.  The same Slovak/Bohemian/Czech word with an "e" at the end is for more of a dumpling or biscuit, also very, very good. 

This is a recipe for the fold over kind with jam or pie filling in the middle.  You could also roll the dough into a tube and then cut them, put a thumbprint in them and add the jelly or filling without folding them over, just add some powdered sugar on top.

Vegan Kolacky

2 2/3 c flour
2 2/3 sticks vegan "butter"
8 oz. Better than Cream Cheese
1 can Solo pie filling

Mix together first 3 ingredients until a dough is formed. Refridgerate at least 1 hour.

Roll out 1/3 dough onto prepared surface with sugar and flour into a thin sheet. Cut into squares and add a dollop of the Solo onto each square. Fold up 2 corners and pinch together.

Bake for 8-10 min. at 350 or until lightly golden brown.
